The Dover Sole is a long flatfish with a small head and light brown skin. Fish Co supply Dover Sole in a variety of ways, either with Top Skin or Filleted with Skin on or off, dependant on your requirements.
The skin of a Dover Sole is coarse but this separates easily from the flesh and the flesh falls easily from the bone. Traditionally it is skinned only on one side leaving the white underside in place. The flesh from the fish is firm but full of flavour and with a meaty texture.
Dover Sole can be prepared in many ways, including cooked whole, or as fillets and grilled, fried or poached. It's usually cooked on the bone and is often best served with as little flavouring as possible.
