The Halibut is the largest of the flat fish. Halibut can grow to weigh in excess of 18 stones. Halibut is mostly available as steak portions but can also be filleted and cutlets. Fish Co supply large halibut as portions only (10kg +) Smaller Halibut is available with the Top skin on or off, filleted with skin on or off or as a portion.
The Halibut has firm and meaty white flesh and a delicious flavour, It is a fish which can dry out if not cooked properly. Farmed Halibut is the better sustainable option as wild Halibut has some suspected sustainability issues.
