Plaice is one of the most popular flat fish available. Unfortunately due to over fishing stocks are low and often unsustainable. The fish itself is delicious with a mild sweet flavour.

Plaice generally cooks very quickly and due to this should be ideally grilled, fried or poached. If poaching you should use the liquid as the sauce or perhaps cover in breadcrumbs and egg and pan fry.
