The Marlin has a taste and texture similar to the Swordfish. Quiet a rare fish for menus appearing mostly in fine restaurants. In Japan their meat is considered a delicacy, where it is served raw as sashimi.
The four different types of Marlin (Black, Blue, White and Striped) are all fairly similar. Marlin is very firm fleshed so you can use your favourite tuna or swordfish recipe. It grills very nicely.
